In this time of social distancing and self-quarantine, you don’t have to give up on good nutrition and great food. You can still have delicious meals. Many of us have stocked up on canned goods, which may normally not sound the most appetizing, but there are so many different vegan recipes using canned and dried goods .
With a few canned goods to stock up on like peas, corn, beans, lentils, chickpeas,tomato sauce, vegetable broth, spinach, coconut milk, pumpkin puree, jackfruit, and artichoke hearts, to name a few and with the right spices and add-ins, canned goods can make for an amazing meal. They will keep you healthy; physically, mentally and emotionally while you are riding out this time of uncertaininty.
Over the next few days or as long as this ever changing pandemic lasts, I will share with you some of my favorite plant based easy pantry meals.

Perfect Pumpkin Pie Oatmeal [Vegan]

1 cup almond milk
1/2 cup pureed pumpkin
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
1/2 cup rolled oats (not instant)
2 tablespoons chopped pecans
1 tablespoon pumpkin seeds
1 tablespoon unsweetened shredded coconut
1 tablespoon raw cacao nibs
In a small pot whisk together almond milk, pumpkin, maple syrup, vanilla, cinnamon, ginger, nutmeg and cloves.
Add the oats heat on medium heat until it starts to bubble and spurt. Turn down the heat and cook for an additional 5 minutes until oatmeal is soft.
Remove from heat, sprinkle with pecans, pumpkin seeds, coconut, and cacao nibs.
